Roasted Raw Mango Cooler


1. Mangoes (aam) raw 6
2. Sugar, dissolved in 1 cup of water
3. To make syrup ¼ cup
4. Black rock salt (kaala namak) 1 tsp
5. Cumin (jeera) seeds, roasted 1 tsp
6. Mint (pudina) leaves, blended
7. To a fine paste 1 tsp
8. Salt to taste


Method :


Roast the mangoes in a baking tray for 45 minutes at 180°C / 350°F. Remove the pulp from the mangoes and discard the skin and the seeds. Blend the pulp to a fine paste with the sugar syrup. Add 3 cups of iced water and blend well. Add the remaining ingredients and blend further. Remove, adjust the seasoning and serve in tall glasses.
